Android Auto apps vanish when phone battery optimization auto-disables unused apps, especially on Samsung phones. Relaunch the app on the phone and reconnect to Android Auto to restore it. Hide apps by customizing the launcher in Settings > Connected devices > Android Auto > Customize launcher.
