Percentiles like p50, p90, and p99 describe latency distribution boundaries better than the mean, which skews with outliers. p50 shifts indicate common-path issues; p90 changes point to slower subsets; p99 rises reveal tail problems like GC pauses or hot keys. Prometheus histogram_quantile() estimates these values from buckets.
